We are in one of the most challenging times of the year for us in terms of weather. As I’m typing this, I’m watching coverage of damage left by Hurricane Ida. I was planning to post this menu yesterday, but I didn’t get it finished because we had family evacuate Louisiana and come here on Saturday. Spending time with them is more important than my menu, so it got delayed! We have about a month or so before we can let our guard down here in the Houston area. Meanwhile, it’s so hot outside that we spend almost all our time indoors. We usually go for a walk in the morning, but the heat indexes of 105-110°F are keeping us indoors during the afternoon. Pumpkin-flavored foods are arriving in the grocery stores, though, so I know fall is imminent! I’m ready for it.
We have family coming to visit during the first couple weeks of September (this is a planned visit—they will be here in addition to our loved ones who fled Ida), so my plan for the next couple of weeks is tentative. However, the rest of the month should be typical. Here’s what we plan to eat:
Days 1-7
- Spaghetti with meat sauce, green beans
- Grilled chicken nuggets, homemade macaroni and cheese, broccoli with ranch dip
- Pizza, garden salad
- Build-your-own sliders, air fryer French fries, veggie sticks
- Chef salad, breadsticks
- Creamy turkey and mushroom spaghetti, green beans
- Burrito bowls
Days 8-14
- Baked ziti, green beans
- Air fryer chicken drumsticks, seasoned rice, veggie sticks
- Sticky pork ribs, baked beans, roasted summer vegetables
- Chicken club wraps, veggie sticks
- Taco salad
- King ranch chicken casserole, green beans
- Creamy Mediterranean chicken over pasta, steamed broccoli
Days 15-21
- Pasta primavera
- Savory roast chicken and vegetables
- Turkey and wild rice casserole, dinner rolls
- Cheeseburger quesadillas, veggie sticks
- Chef salad, garlic toast
- Chicken bacon ranch macaroni and cheese, steamed carrots
Days 22-30
- Chicken and broccoli Alfredo skillet
- Slow cooker beef and broccoli, basmati rice
- Vegetable lasagna, breadsticks
- Grilled chicken sandwiches, veggie sticks
- Taco salad
- Chicken noodle casserole, green beans
- Breakfast for dinner
- Sausage and root vegetable sheet pan dinner, seasoned rice
- Cheesy chicken and broccoli rice
