I’m a little late getting my menu posted this month because things are chaotic around here. I hinted last month that we might be embarking on some changes regarding my husband’s job and where we live. These changes are now underway. My husband will begin a new job in October. We will spend this month finding a new place to live and getting packed for our move.
This move—from the Houston area to the DFW area—isn’t the move we were hoping for, but we believe it will be positive for us. I noted several years ago that we wanted to move closer to family. Over the past few years my husband has applied for numerous jobs in locations where we’d like to be, but nothing has worked out. In most cases, he never heard back after applying for the positions (not even perfunctory emails stating that they were interviewing other candidates). In some cases, he found out (via conversations with individuals he knows who work at the organizations) that positions he applied for didn’t really exist! The jobs were posted despite there not truly being open positions! It’s been frustrating.
Throughout this process, my husband came across the position he has now accepted. It has several advantages over his current position. Though it isn’t our final destination, we believe it will serve as a nice steppingstone along the way.
You can probably guess that all of this means my menu is tentative. I’ve kept it simple, but I imagine it will still undergo several changes later in the month. Here’s the plan for now (you can see previous menus here).
Days 1-7
- Soft tacos, corn
- Ham, mashed potatoes and gravy, green beans
- Southwest cheesy chicken sandwiches, fresh veggies with ranch dip
- Creamy Cajun chicken pasta, side salad
- Air fryer BBQ chicken skewers, seasoned rice, fresh veggies with ranch dip
- Chef salad
- Chicken Florentine skillet
Days 8-14
- Takeout from restaurant
- Takeout from restaurant
- Cheeseburger quesadillas, fresh veggies with ranch dip
- Lemon pepper chicken, roasted summer vegetables
- Pizza, side salad
- Sausage and root veggie sheet pan, seasoned rice
- Taco salad
Days 15-21
- Burrito bowls
- Baked ziti, green beans
- Air fryer steak bites, fresh veggies with ranch dip
- One-pot savory chicken and rice, glazed carrots
- Tortellini tomato soup, side salad
- Chef salad
Days 22-30
- Soft tacos, corn
- Easy French dip sandwiches, fresh veggies with ranch dip
- Lemon pepper chicken, buttered noodles, green beans
- Cheesy sausage and pepper pasta, side salad
- Super easy beef and rice casserole, fresh veggies with ranch dip
- Easy chicken Normandy skillet, green beans
- Taco salad
- Sausage and rice skillet, steamed broccoli
- Breakfast for dinner
We’ll see how this changes as the month progresses! Of course, then there is next month to start thinking about. What are your plans for September?

This meal plan looks delicious 🙂 For meals, I’ve been trying to focus on as much easy stuff as possible-meals that are simple to prepare and are simple to eat (or for the kids to get out themselves). We aren’t particularly busy people (we actually keep a very slow pace of life) but with caring for all the kids and already spending so much in the time kitchen baking and cleaning up, I have to keep it simple with food! I usually make meatballs each week-for every pound of ground beef I add an egg, and I toss in onion, salt, pepper, Worcestershire sauce, and old-fashioned oats. After our initial meal, we eat the leftovers cold and dip them in barbecue sauce. When the weather eventually gets colder, I’ll probably do lots of soups and stews, too.
And congratulations to your husband for the new job! I think it’s really awesome that you two are so open to God’s call even if it’s not what you had wanted. He has a plan in all this! I hope that the move goes well and that you are able to get settled in okay. A relative of mine lives in the DFW area and loves it! We’ve only visited a couple times, but we have really enjoyed the area as well. I’ll keep all of you in my prayers!

I love the meatball idea. My 7-year-old loves meatballs, so she would really appreciate it if I made a huge batch of them once a week!
