I’m happy that September is here and that we are leaving August behind! August is always rough around here because of the heat. However, this year it seemed worse than usual because our AC stopped working. We are currently renting, so we had to wait for our landlord to make arrangements to get it fixed. We spent several days (with daytime highs of 103-105°F) without cold air. When the AC finally got replaced, it kept shutting down due to a clogged condensate drain line. Once this got addressed, we finally had air conditioning again!
On a more pleasant note, we had family members visit. My girls enjoyed getting to spend time with their grandparents and getting to eat more candy than they’re allowed to eat when their grandparents aren’t around. We are hopeful that our temperatures will soon reflect the fact that we’ve turned the page to an autumn month. Once this happens, we’ll eat more soups and casseroles. For now, our menu contains a few of these, but I’m still including lots of foods such as salads and sandwiches, as well as those that can be prepared in the air fryer or on the stovetop. Days 1-7
- Chef salad
- Air fryer BBQ chicken skewers, seasoned rice
- Sausage and potato country casserole, glazed carrots
- Creamy Cajun chicken pasta, green beans
- Chicken fajitas
- Slow cooker red beans and rice, fresh veggies with ranch dip
- Tortellini tomato soup, cheesy garlic bread
Days 8-14
- Philly cheesesteak sandwich, fresh veggies with ranch dip
- Lemon pepper chicken, buttered noodles, green beans
- Creamy turkey mushroom spaghetti, garden salad
- Soft tacos, corn
- Country chicken and veggies over biscuits
Days 15-21
- Taco salad
- Smoked sausage, seasoned rice, fresh veggies with ranch dip
- Chicken noodle casserole, glazed carrots
- Chicken Normandy skillet, green beans
- Sausage and tortellini in cheesy tomato sauce, Caesar salad
Days 22-30
- Southwest cheesy chicken sandwiches, fresh veggies with ranch dip
- Air fryer steak bites, seasoned rice, green beans
- Creamy ground turkey and noodle casserole, garden salad
- Mexican rice bake, tortilla chips
- Creamy garlic meatballs over noodles, glazed carrots
- Breakfast for dinner
