Slow Cooker Southwest Chicken

Every now and then my dinner plans don’t work out and I have to scramble to find something to prepare. This happened several weeks ago when I went to pull some Italian sausage from the freezer to thaw for dinner and realized I didn’t have any. I had forgotten to put it on my grocery order. I looked over the contents of my freezer and pantry and threw some ingredients together in my slow cooker.

This chicken, made with pantry staples, has it all: family-friendly flavor, lots of nutrients, ease of preparation, and affordable ingredients.

Several hours later we ate this surprisingly delicious Slow Cooker Southwest Chicken for dinner. We enjoyed it so much that we’ve had it a couple of times since then.

Ingredients

  • 2 lbs. chicken breast tenderloin
  • 1 can (10 oz.) diced tomatoes and green chilies
  • 1 can (15 oz.) corn, drained
  • 1 can (15 oz.) black beans, rinsed and drained
  • 1 can (10 oz.) Campbell’s Fiesta Nacho Cheese Soup
  • Prepared rice
  • Avocado and sour cream (if desired)

Instructions

Place the chicken and tomatoes in the bottom of a slow cooker.

Cook on low for 4-5 hours. Add the corn and black beans; cook for another hour.

Stir in the cheese soup and cook 5 minutes or until thoroughly heated. Serve over prepared rice. Garnish with sliced avocado and sour cream, if desired. Yield: 8 servings.

Notes

There are so many things to love about this recipe! It yields a yummy meal that has a family-friendly flavor. It is nutritious. It is made of affordable ingredients. It’s easy to prepare. If you like recipes with these characteristics, then you’ll want to give this one a try!

If you want to add a little complexity to the flavor of the dish or give it a little extra spice, then feel free to add in some chili powder, cumin, paprika, garlic powder, etc. Also, feel free to garnish it with whatever you prefer. I like avocado and sour cream, but things like shredded lettuce, sliced black olives, etc. would also work well. If you can’t find the cheese soup in your local store, then simply sprinkle the chicken with shredded cheese before serving.
