Sugar Cookie Pizzas

Last week my middle daughter had a birthday. No one in our family really likes cake, so we usually celebrate with some other type of sweet treat.

These large sugar cookies, topped with frosting and candies, look just like pizzas! They’re a tasty treat that’s fun to make and eat.

We made cookie pizzas for her birthday this year! These “pizzas” had sugar cookies for crusts, frosting for cheese, and various candies for toppings. My girls had so much fun decorating and eating their Sugar Cookie Pizzas!

Ingredients

For the crusts

  • 1 cup softened butter
  • 1 cup sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 2 teaspoons baking powder
  • 3 cups flour

For the toppings

  • ½ cup softened butter
  • 2 ¼ cups confectioners’ sugar
  • 1 ½ teaspoons vanilla extract
  • 2 tablespoons milk
  • Various candies (we used cut gummy worms and Fruit Roll-Ups)

Instructions

For the crusts

Preheat the oven to 400°F. Cream the butter and sugar. Beat in the egg and vanilla extract. Add the baking powder and flour (you may need to mix the last of the flour in by hand). The dough will be stiff (if it is too stiff, then add a few drops of milk). Roll out to about a 1/3 inch thickness, cut into large circles (I used a mixing bowl as a cookie cutter), and bake for 10-12 minutes. Cool completely before adding toppings. Yield: 3 cookies that are 8-9 inches in diameter.

For the toppings

Beat the butter until smooth and fluffy. Gradually add in the confectioners’ sugar until fully incorporated. Add the vanilla extract and milk; beat for an additional 3-4 minutes.

Apply the frosting to the cooled cookie crusts. Top with candies that mimic the appearance of pizza toppings. Cut and enjoy!

Notes

This was such a fun treat to make and eat! The sugar cookie recipe I used for these is one I’ve had for years. It yields a cookie that is not particularly sweet. If I wanted to eat plain sugar cookies, then I wouldn’t use it. However, it works well for these because it balances out the sweetness of the frosting and candies.

We topped our pizzas with pepperoni, peppers, and onion. I cut small circles out of Fruit Roll-Ups for the pepperoni and cut gummy worms into pieces for the peppers and onion. There are lots of different candies you could use to make toppings, so have fun with this!
