There are some flavors that just go together perfectly. In my opinion, one of these great flavor combos is pears and blueberries.
Because I love the flavor of these two fruits together, I once tried a simple recipe for a pear blueberry cobbler. This was about a decade ago. The recipe was so easy and yielded such a tasty dessert that I’ve been making it regularly since then.
Ingredients
(Adapted from the 2002 Quick Cooking Annual Recipes cookbook.)
- 2 cans (29 oz. each) sliced pears in fruit juice
- 2 cups all-purpose baking mix
- 1 cup frozen or fresh blueberries
- 2-3 tablespoons butter
- Whipped cream or vanilla ice cream, optional
Instructions
Pour one can of pears (including the liquid) into a lightly greased 2.5-qt. baking dish. Drain the other can of pears, reserving the liquid because you may need it later. Add these pears to the baking dish.
In a medium bowl, gently stir the fresh or frozen blueberries into the baking mix. Sprinkle the mix over the pears; dot with the butter.
Bake, uncovered, at 400°F for 20 minutes. Take a peek at the cobbler. If the juice has bubbled up and all portions of the baking mix are moist, then continue baking until it is lightly browned, about 5 minutes. If portions of the baking mix aren’t moist, then pull the cobbler from the oven and drizzle with a couple tablespoons of the reserved fruit juice. Return to the oven and bake for 5 minutes longer or until the top is lightly browned. Top with whipped cream or vanilla ice cream before serving, if desired. Yield: 8-10 servings.
Notes
I love making this cobbler when I need to quickly prepare a dessert. The result is so tasty! It definitely doesn’t taste like something that I quickly threw together—though that’s exactly how I make it! The original recipe called for blueberry muffin mix instead of all-purpose baking mix with blueberries. You can go with this option (you’ll need a 16 to 18 oz. box of blueberry muffin mix). I choose to use blueberries plus an all-purpose whole wheat baking mix (you can see it here) in order to make the cobbler a little healthier.
If you can’t find pears canned in fruit juice then it is okay to use pears canned in light syrup. If you can’t find pear slices, then use pear halves and simply cut them into slices before covering them with the baking mix. Feel free to experiment with other varieties of fruit and baking mixes. I’ve used this idea with canned peaches and a cinnamon streusel muffin mix. It was fantastic! I’m sure other combinations would be great, too.
