My daughters and I love sweet potatoes! We eat them nearly every week, so I often try new recipes that allow us to enjoy their wonderful flavor. We tried these Sweet Potato Waffles a couple of weeks ago and they were an instant hit!
Ingredients
(Adapted from this recipe.)
- 1 ½ cups mashed or pureed sweet potato
- 1 ½ cups milk
- 2 eggs, slightly beaten
- 2 tablespoons butter, melted
- 1 ½ cups flour (I used white whole wheat, but all purpose is also fine)
- 2 tablespoons brown sugar
- 1 ½ tablespoons baking powder
- 1 teaspoon ground cinnamon
- ¼ teaspoon ground nutmeg
- ¼ teaspoon ground ginger
- A dash of salt
Instructions
Preheat a waffle iron according to manufacturer’s instructions.
Stir together the sweet potato, milk, eggs, and butter in a bowl. Whisk together the remaining ingredients in another bowl. Combine the contents of the two bowls; stir until just combined (the batter will be thick).
Spoon the batter into a greased, preheated waffle iron and cook until the waffles are crisp and golden on the outside. Serve with whatever toppings you desire. Yield: approximately 6 large waffles.
Notes
These waffles have an amazing flavor! We’ve topped them various ways. They’re great with a little maple syrup or with maple syrup and marshmallows (my kids prefer them this way). I think they’re especially delicious with maple syrup, chopped pecans, and dried cranberries.
In order to get the 1 ½ cups mashed sweet potato needed for the recipe, I usually cook a large sweet potato or two small to medium sweet potatoes. As noted above, the batter is pretty thick so you may need to spread it out a little after you spoon it into the waffle iron. The waffles are worth the effort, though, because they are so tasty!

Hey Shannon. Thanks for visiting my site today. I love sweet potatoes too. I have convinced my sister they are as versatile as russet potatoes. So, she has started making potato salad with sweet potatoes; it is delicious. I also like to cut mine up in cubes and saute them in coconut oil like I would hash browns. I lay them in a skillet, cover for 8-12 minutes depending on the size of cubes. Then I season with sea salt, black pepper, and garlic powder granules. I absolutely love them with my eggs. Anyway, you make me want to find a waffle iron. I hope you and yours have a blessed holiday season.

These look delicious! My boys don’t like sweet potatoes but I think I’d have no problem getting them to eat these. They remind me a little bit of some butternut squash muffins I used to make. Thanks for sharing with us at Encouraging Hearts and Home. Pinned.

I’m not sure what I did wrong they kept sticking to my waffles iron I have two waffles irons a regular and mini now have thenatter just stuck on both my batteries not so thick idk🤔

I’m so sorry you had trouble with them sticking! I haven’t made these in a while, but I don’t recall sticking being an issue for me. However, I do remember the batter being very thick. Did you grease the waffle irons before placing the batter in them?

These are fantastic!! I usually don’t comment if I’ve had to adjust a recipe, but this one is strong and stands on its own. I only had 1 c of sweet potato, so had to adjust down a little on the full recipe size. I also wanted to use buttermilk, not regular milk, and it didn’t harm this recipe at all. These are a hit for us, thank you!

I made this recipe with my new Breville Smart Waffle Pro. It yielded 7 waffles. I brushed some coconut oil on the bottom side on the first batch of four waffles on level 3. Non-stick spray can impact the performance of the non-stick surface on the cooking plates. The waffles were light and tasty. They were softer than regular waffles. I plan on toasting the leftovers.

Can these waffles be frozen then reheated?

Yes! Let them cool completely before freezing. I like to place them flat on a baking sheet and freeze them so they are not touching (this way they don’t stick together). Then, once frozen, I stack them and place in a baggie or tub.
They can be reheated in the microwave or toaster.
