I really enjoy the flavor of Philly Cheesesteak Sandwiches, so we occasionally have them for dinner. I also make dishes, such as Philly Cheese Meatloaf, that are inspired by these sandwiches.
Several months ago, I came across a recipe for cheesesteak sandwiches that have a Texas twist. I was so excited to finally try these!
Ingredients
(Adapted from this recipe.)
- 2 fresh poblano peppers, roasted, peeled, seeded, and sliced
- 1 medium onion, thinly sliced
- 1 lb. sirloin steak, thinly sliced
- 1 tablespoon fajita seasoning
- 2 tablespoons olive oil, divided
- 1 cup queso dip (I used my homemade Healthier Queso Dip, but you can use whatever queso dip you prefer)
- 4 sandwich rolls
Instructions
Heat 1 tablespoon of the oil in a large skillet over medium-high heat. Add the sliced onions. Cook until they begin to brown and are tender. Remove and place in a bowl with the prepared poblanos.
In the same skillet, add the remaining oil and the sliced beef. Sprinkle the beef with the fajita seasoning, then cook for several minutes until well browned. Place the onions and peppers in the skillet; cook until the veggies are heated.
Place the sirloin mixture on the 4 sandwich rolls. Top with warm queso dip. Serve immediately. Yield: 4 sandwiches.
Notes
This was such a great twist on traditional Philly cheesesteak sandwiches! The poblano peppers were a nice change, and the flavor of the queso dip really gave the sandwiches extra pizzazz. I served the sandwiches alongside fresh veggies and ranch dip, which made a filling and easy-to-prepare dinner.
I had leftover Healthier Queso Dip that I heated and used to top the sandwiches, but you can also use queso dip from a jar or queso dip prepared some other way.
