Vanilla Buttermilk Spice Waffles

There are two breakfast foods that my kids absolutely love: muffins and waffles. About a year ago I made some Vanilla Buttermilk Spice Muffins that had a delightful taste. At the time, I thought that they would be a perfect treat to make during the fall months because they have the yummy flavors of cinnamon and nutmeg.

These waffles, teeming with the rich flavors of vanilla, buttermilk, cinnamon, and nutmeg, are a tasty way to start the day!

When I thought about making them the other day, I decided to change the recipe slightly so I could make Vanilla Buttermilk Spice Waffles instead. They were delicious!

Ingredients

  • 2 large eggs
  • 2 ¼ cups flour
  • 1 cup buttermilk
  • 1 cup milk
  • ½ cup vegetable oil
  • 3 tablespoons sugar
  • 1 tablespoon baking powder
  • 1 tablespoon vanilla extract
  • 1 teaspoon cinnamon
  • 1 teaspoon nutmeg
  • ½ teaspoon salt

Instructions

Preheat the waffle iron. Beat the eggs in a large bowl until fluffy. Beat in the remaining ingredients until just smooth.

Spray the preheated waffle iron with non-stick cooking spray. Pour the batter into the hot waffle iron. Cook until golden brown. Yield: about 8 waffles.

Notes

These waffles have such a delicious flavor! The vanilla and buttermilk give them a deep, rich flavor. This, combined with the hint of cinnamon and nutmeg that is in each bite, makes for an absolutely wonderful treat for your taste buds. We topped our waffles with maple syrup. The flavor of the syrup was a perfect complement to the flavor of the waffles.

I know this year’s celebration will look different for many of us because of the COVID pandemic.
