August didn’t end quite as we had planned. My husband’s van began having some issues. This turned out to be the transmission. Replacing a transmission is quite expensive, and my husband’s van was already requiring a lot of work because of its age and the miles on it. Therefore, we decided to replace the vehicle. After spending a week navigating the outrageously expensive used car market, everything came to a stop for several days because we had an unwelcome visitor: COVID. Thanks to diligent use of masks, social distancing, and vaccines, we managed to avoid COVID since the pandemic began. Unfortunately, my husband picked it up anyway. He came home from work one day with a sore throat. He then felt really fatigued one evening. Thankfully, that’s all he experienced. The rest of us weren’t so lucky. Shortly after his symptoms abated, we developed an assortment of symptoms. For me, the worst were high fever, muscle aches, and severe headache that lasted for days. For my kids, the worst symptoms were vomiting and fever. We still have some lingering symptoms, but we’re on the mend!
We didn’t finish out our menu last month because I was too sick to be doing much cooking. My sister, who is incredibly generous, had dinner delivered for us on a couple of nights and ordered a bunch of ready-to-eat foods (canned soups, applesauce pouches, etc.) for us from the grocery store. This helped a lot! I’m getting back on my feet, so I’ll be cooking again—just in time for a new menu!
Autumn begins later this month, and I’m ready for fall favorites like casseroles and soups. It’s too hot around here to have these all month long, but I’m going to start including a few on our menu. We’ll be having visitors towards the end of the month, but we’re not sure precisely when. I’ll have to be flexible and possibly make some changes to the menu when those plans are finalized. You can access many of my previous menus on this page or read on for this month’s tentative menu.
Days 1-7
- Days 1-4: Meals on last month’s menu that I didn’t prepare due to being sick
- Taco salad
- Smoked beef sausage, seasoned rice, fresh veggies with ranch dip
- Butternut squash macaroni and cheese, side salad
Days 8-14
- Grilled cheese sandwiches, tomato soup
- Slow cooker southwest chicken
- Turkey tetrazzini, sugar snap peas
- Lemon pepper chicken, buttered noodles, steamed broccoli
- Tuscan tortellini skillet, green beans
- Black bean and sweet potato enchiladas
- Creamy Cajun chicken pasta, side salad
Days 15-21
- Chef salad
- Creamy turkey mushroom spaghetti, green beans
- Sausage and apple stuffed acorn squash
- Butternut squash Alfredo pasta, side salad
- Minestrone soup, breadsticks
- Slow cooker cranberry BBQ pulled pork, fresh veggies with ranch dip
- One-pot savory chicken and rice, sugar snap peas
Days 22-30
- Hamburgers, fresh veggies with ranch dip
- Sausage and potato country casserole, steamed broccoli
- Roasted chicken with molasses and apples, glazed carrots
- Baked ziti, green beans
- Chicken spaghetti, corn
- Country chicken and veggies with biscuits
- Breakfast for dinner

So sorry to hear you were all sick; but so glad you’re all on the mend! We’ve been fighting off some cold symptoms for nearly 2 weeks now and my cooking has fallen by the wayside a few times as well. We’re looking forward to adding more fall like dishes with soups and stews too.
