The arrival of October took us a bit by surprise! The days pass so quickly now that we’re back doing school. I’m pleased to report that we are finally getting a break from the extreme heat. We’ve had rain these last couple of days (which we needed desperately). It ushered in cooler temperatures. It’s not quite cool enough that I can open the windows in the morning, but days when I will be able to are on the horizon.

October should be relatively routine for us. In addition to our usual activities, we’ll spend lots of time outdoors in the cooler weather and enjoy some spiced apple cider. It feels a bit like the “calm before the storm” of the Thanksgiving and Christmas holidays. Here are the dinners we plan to eat (you can see past menus here).
Days 1-7
- Meatloaf, mashed potatoes and gravy, green beans
- Creamy ground turkey and noodle casserole (split between two baking dishes—eat one, freeze one), garlic parmesan roasted broccoli
- Creamy Italian sausage soup, Caesar salad
- Stuffed pepper skillet
- Leftovers
Days 8-14
- Chicken noodle casserole (split between two baking dishes—eat one, freeze one), glazed carrots
- Mexican rice bake, tortilla chips
- Easy cheesy beef stroganoff, green beans
- Creamy turkey mushroom spaghetti (split between two baking dishes—eat one, freeze one), garden salad
- Leftovers
Days 15-21
- Skillet apple cider chicken, roasted carrots
- Creamy ground turkey and noodle casserole (thaw and bake the spare casserole from two weeks ago), green beans
- Lemon pepper chicken, seasoned rice, air fryer parsnips
- Beef stew, biscuits
- Leftovers
Days 22-31
- Mushroom and onion smothered chicken, peas
- Chicken noodle casserole (thaw and bake the spare casserole from two weeks ago), roasted carrots
- Sausage and mushroom stuffed acorn squash
- One-pot savory chicken and rice, roasted sweet potatoes
- Creamy turkey mushroom spaghetti (thaw and bake the spare casserole from two weeks ago), steamed California blend vegetables sprinkled with parmesan

- Pumpkin chili
- Sausage and potato country casserole, green beans
- Breakfast for dinner
