Pillowy soft with a light lemon flavor, these Soft Lemon Cookies are a perfect treat for summer picnics and barbecues.

Lemon is a flavor that my two oldest girls love, so several years ago I made them Soft Lemon Cookies. They were a hit! Since that time, these cookies have been one of my go-to dessert recipes for summer picnics and BBQs. They are always popular at these get togethers. You’ll see why if you give them a try. Ingredients (Adapted from this … [Read more...] about Soft Lemon Cookies

What’s for dinner in my house during July 2024? Meals include Tropical Red Beans and Rice, Cheeseburger Quesadillas, and Stovetop Lasagna.

We had a fun, eventful June! We traveled to Colorado for a week-long visit with family. My kids really enjoyed the time with their cousins. Traveling is particularly challenging for us because my youngest child, who is autistic, greatly values her routines. This trip was a bit difficult for her, but she settled in after several days and was … [Read more...] about July 2024 Dinner Menu

What’s for dinner in my house during June 2024? Meals include Cheeseburger Quesadillas, One-Pot Chicken and Rice, and Taco Salad.

We had a lovely visit from some family members last month. It was so nice to catch up! A good portion of the rest of our time was spent completing schoolwork. This is not unusual because we do take a year-round approach to homeschooling. However, we have extra to do because we missed several weeks in the fall while we were moving. We’ll … [Read more...] about June 2024 Dinner Menu

In the book A Fine Dessert, four families living in four different centuries prepare and enjoy Blackberry Fool. We joined in and made it for ourselves!

A Fine Dessert: Four Centuries, Four Families, One Delicious Treat by Emily Jenkins shares the experiences of four families living in four different centuries as they prepare and later enjoy a treat (Blackberry Fool) together. We love how the book shares the details of how the treat would be prepared using the tools and techniques of … [Read more...] about Cooking the Books: A Fine Dessert and Blackberry Fool

What’s for dinner in my house during May 2024? Meals include BBQ Chicken Salad, Build-Your-Own Sliders, and Cilantro Lime Chicken.

Last month passed pretty uneventfully. Thankfully, we were able to view the eclipse! We had a break in the clouds for long enough to see it. My girls thought it was neat. We’ve spent a lot of time outside enjoying the mild spring weather. We’re never ready for the heat of summer, so we will enjoy this while it lasts! This coming month … [Read more...] about May 2024 Dinner Menu

Texas Cheesesteak Sandwiches

April 23, 2024 By Shannon This post may contain affiliate links and this site uses cookies. Click here for details.

Texas Cheesesteak Sandwiches are a flavorful, Texas-inspired twist on classic Philly Cheesesteak Sandwiches.

I really enjoy the flavor of Philly Cheesesteak Sandwiches, so we occasionally have them for dinner. I also make dishes, such as Philly Cheese Meatloaf, that are inspired by these sandwiches. Several months ago, I came across a recipe for cheesesteak sandwiches that have a Texas twist. I was so excited to finally try … [Read more...] about Texas Cheesesteak Sandwiches

We were delighted to have two visits from family last month. The second visit was planned, but earlier in the month we had an unexpected visit that allowed my kids some time to play with one of their cousins. What’s for dinner in my house during March 2024? Meals include Meatloaf Parmesan, Creamy Cajun Chicken Pasta, and Taco Salad.

We got an early dose of spring this week, and I’m not ready for the warm temperatures! Alas, I don’t have much choice in the matter. The Creamy Veggie Tortellini Soup I made earlier this week is likely the last soup I will make until fall. This month should be mostly routine, but we do have a visit from family happening as we near … [Read more...] about March 2024 Dinner Menu
