Hot Cocoa Ice Cream

If you enjoy hot cocoa with marshmallows, then you will love this ice cream! It has all the traditional flavor of hot cocoa in a not-so-hot format.

It may be chilly outside, but we’re not going to stop trying new flavors of homemade ice cream. This variety seems particularly appropriate given it takes the classic flavor of hot cocoa—a treat that is perfect for cold days—and turns it into a frozen treat.

Ingredients

(Adapted from this recipe.)

  • 2 ½ cups heavy cream
  • 1 can (14 oz.) sweetened condensed milk
  • ½ cup milk
  • ¼ cup sugar
  • ½ cup hot chocolate mix
  • 1 teaspoon vanilla extract
  • 1 cup dehydrated mini marshmallows (see note below)

Instructions

In a medium bowl, use a whisk or immersion blender to mix together the cream, sweetened condensed milk, regular milk, sugar, hot chocolate mix, and vanilla. Place this mixture into the bowl of your ice cream maker. Churn according to the manufacturer’s instructions.

Once the ice cream is done churning, fold in the marshmallows. Place in a freezer-safe container and freeze until hard. Yield: 8 servings.

Notes

If you enjoy hot cocoa with marshmallows, then you are going to love this ice cream! It has all the traditional flavor of hot cocoa, but in a not-so-hot format. The whole family enjoyed this, especially my kids. They were particularly fond of the marshmallows.

The original recipe for this ice cream calls for the use of regular mini marshmallows. I thought the squishiness of these might be a little strange in ice cream, so I chose to use dehydrated marshmallows. You can purchase these in stores or on Amazon.

You can also make your own dehydrated marshmallows. You can do this in a dehydrator or in the oven. If using the oven, simply set it to its lowest temperature setting (preferably under 200°F) and place the marshmallows in a single layer on a baking sheet (make sure they aren’t touching because they will expand a bit initially). Toss every 20 minutes until completely dry. Of course, if you prefer the puffiness of marshmallows that haven’t been dehydrated, then you can save yourself some effort and use these!

You can get creative and try this recipe with various flavors of hot chocolate (peppermint, caramel, etc.). Enjoy!
