I find it a little difficult to believe that April is over! Thankfully, the month passed without incident for us. We had numerous rainy days and thunderstorms, but generally the weather was mild. This allowed us numerous opportunities to get outside. We’ve been very diligent with school and are on track to wrap things up by the end of May.

Other than wrapping up the school year, we don’t have a whole lot on the calendar for May. This is good because I could definitely use some down time! I also need to get some decluttering and deep cleaning done around the house. Here are the dinners we plan to eat this month (you can see past menus here).
Days 1-7
- Air fryer steak bites, Ceasar salad
- Grilled chicken sandwiches, fresh veggies with ranch dip
- Cheesy sausage and pepper pasta
- Chicken quesadillas, corn
- Chef salad
- Slow cooker beef and broccoli, basmati rice
- Leftovers
Days 8-14
- Lemon pepper chicken, buttered noodles, air fryer asparagus
- Easy French dip sandwiches, fresh veggies with ranch dip
- Creamy Caesar chicken pasta, green beans
- Nachos
- Peach balsamic chicken, basmati rice, garden salad
- Beer-battered cod, roasted summer vegetables

Days 15-21
- Smoked sausage, macaroni and cheese, green beans
- Chicken wraps, fresh veggies with ranch dip
- Easy cheesy beef stroganoff, roasted carrots
- Burrito bowls
- Taco salad
- Air fryer shrimp, potato wedges, garden salad
- Leftovers
Days 22-31
- Chicken drumsticks, classic potato salad, fresh veggies with ranch dip
- Cheeseburger quesadillas, garden salad
- Soft tacos, corn
- Slow cooker bourbon chicken, basmati rice, green beans
- Pico de gallo tilapia, seasoned rice, black beans
- Leftovers
- Grilled chicken tenders, slow cooker baked beans
- Chicken club sandwiches, air fryer zucchini chips
